Sicilian stuffed dried tomatoes - the recipe

A typical recipe of the  Sicilian tradition?
The dried tomatoes, a delicious and fast.
Let's start from the origins, stuffed dried tomatoes are a typical Sicilian recipe that belongs to the poor peasant tradition, perfect as an appetizer or for an alternative aperitif.

Ingredients:

• 8 dried tomatoes from  Antica Bottega Siciliana 
• 140g of breadcrumbs 
• 2 cloves of garlic 
• 2 bunches of parsley 
• 2 tablespoons of capers from Antica Bottega Siciliana
• 100g of grated pecorino
Extra virgin olive oil Verdolì q.b.< br>• 4 salted anchovy fillets
• Fine salt to taste
• Black pepper to taste

Procedure:
Put the dried tomatoes in fresh water the night before changing the latter 2 or 3 times before using them, in order to eliminate the excess salt due to drying.
In a pan, melt the anchovy with a little extra virgin olive oil< /span> and pour everything into the breadcrumbs that you previously put in a bowl.
In the meantime, prepare the chopped garlic and parsley and add it to the breadcrumbs by combining the pecorino and desalted capers.
Drain the tomatoes, dry them with paper towels and take two halves.
Add a spoonful of the mixture previously prepared on the first half and close it with the other creating a sort of sandwich.
Pour plenty of extra virgin olive oil into a saucepan and fry them for 2/3 minutes on each side.
An equally excellent and certainly lighter variant involves cooking in the oven for 10 minutes at 200°.
